Coconut sugar comes from the sap of the coconut palm tree. Harvesters climb into the tree and take the sweet nectar after slicing open the blossoms. The sap is evaporated in syrup and then dehydrated before being ground into the sugar crystals. Palm sap has been used for thousands of years as a sweetener alternative. Coconut sugar contains trace amounts of calcium, iron, zinc, and potassium and can prevent low blood sugar. Inulin, a fiber that may improve gut health and lower the glycemic spike from sugar, is also found in small amounts within coconut sugar.
